I know I preach about making a menu and a coordinating grocery store list to make your life so much easier. But, there are days I forget to defrost some meat, or I didn’t pick something up at the grocery store, or I just was lazy and didn’t plan anything. It happens! On those days, I usually try to throw something together really quick. I know this happens to you, too, so here are some quick ideas for when you’re in a rush.
Crockpot Chicken Thighs
If I realize that I forgot dinner before I head to work, I’ll throw some chicken thighs in the crockpot with a bottle of marinade. I always have bottled marinades on hand like teriyaki, steakhouse, and Italian. All I do is put the chicken thighs in the crockpot and top with the sauce. Then I put it on low. I like to do this with bone-in chicken thighs because they stay moister while slow cooking. You can get fancy and make my Ranch Pesto Chicken Thighs, too!
This chicken recipe is so simple, and you probably have all the ingredients on hand! To make my version of OMG chicken, just mix sour cream, ranch seasoning and parmesan together and smear it on top of a chicken breast. Top with seasoned bread crumbs and bake at 350 for about 30 minutes. This chicken is so moist and pure comfort food!
When in doubt, make a salad! Chances are you have some leftover meat from another dinner that week, or some lunch meat hanging around. If not, make it vegetarian or add some hard-boiled egg! I love adding tons of ingredients to my chef salads like vegetables, cheese, croutons and olives.
Pancakes & Bacon
I love having breakfast for dinner, and it doesn’t get much easier than pancakes! Most pancake mixes only require water, and if you want bacon with it, it’s super easy to defrost that in the microwave for a quick dinner.
Grilled Cheese & Soup
We’ve already established that I love cheese more than almost anything, but that’s not the only reason I snuck this in here. It’s fun and really easy to make. Most people have canned soup on hand, and it’s so easy to warm up on the stove or in the microwave. If you want a grilled cheese sandwich, too. That’s also easy and customizable! Add whatever cheese you have on hand, and make it yours! In the summer, I love to use mozzarella cheese, and put basil or pesto and tomatoes on it for a caprese grilled cheese. It’s super good!
